Apple, Yogurt & Sweet Breadcrumb Layered Dessert

Can we take a second to appreciate those layers, I feel like a child that went to the isle of wight or somewhere and came back with one of those multicoloured sand layer thingies, can you still make those? I made way too many breadcrumbs when I was making the salmon macaroni cheese, enter this glorious dessert. I’ve been meaning to make this for a while so this is kind of the perfect opportunity. Growing up we weren’t really a dessert after dinner kind of family unless it was a special occasion and on apple day, I’m not even entirely sure when that is or how my mum always knew when it was, this is what we had for dessert. It’s ridiculously simple, healthy and so easy to make but do not underestimate it, I haven’t eaten this in years but now I’ve rediscovered it I could eat this every day.

Berry Oatmeal Chocolate Chip Cookie Crumble

This is a little bit of an odd one today. I made this recipe over a year ago and I am 90% sure I posted it, I have no idea what happened to it I just realised a while ago that it was sitting in my drafts folder with a title and nothing else, the post was completely blank. I’ve kind of been putting off re-writing this, not that I’m really sure why but a year on I think it probably deserves to see the light of day and it’s strangely coincidental that in my last post I used the same bowl. Anyway, enough about my potential incompetence and on to this delicious crumble recipe. The whole point of this recipe was to turn (probably) my favourite cookie, oatmeal chocolate chip, which I actually made a couple months ago on here, into crumble, maybe I was just looking for an excuse to eat cookies for dessert and make it seem entirely acceptable because in my head crumble is healthy, doesn't matter what you add to it. Obviously fruit is always healthy so we have a winner! Perfect for autumn or fall and still perfect for summer although it’s definitely a lot more like autumn here especially as the ground is covered in leaves which sadly were soggy today due to the rain so you didn’t get that satisfying crunch as you walked over them it was more of a squelch. I like that word, squelch.

Frozen Greek Yogurt Cheesecakes 5 Ingredients (processed sugar free)


The most frustrating thing about these is waiting for them to thaw before you can eat them, impatient souls, especially on a hot summers day! They're so worth it though, really refreshing and all natural ingredients.

The idea kind of originated from vegan cheesecakes although obviously these are not vegan. If you are vegan you can switch out the honey for agave and the yogurt for a dairy free option. I just wanted something easy that you could throw together quickly with few ingredients, so simple, so fast, SO TASTY! I think my favourite one is the chocolate so if in doubt, chocolate! That's quite a good motto for life in general though.

Dark Chocolate and Coconut Muesli with Strawberries and Greek Yogurt (the best muesli ever)


Me and my mum are big muesli fan's we have a giant pull out cupboard full of nuts, seeds, oats and dried fruit. When I say full I mean it's sort of like a random bargain bin of pre-opened packets at wholefoods. In my head we even have a "muesli making station" because the pull out cupboard is right near the edge of the island and we both stand there making our muesli. If my dad is sitting on the island doing a sudoku I end up making my muesli on half of his paper.

When I started eating breakfast a few years ago I used to have this almost every morning, it's pretty much one of my favourite thing's to eat. I even went through a phase of having it for dinner as well; when I got in late and I didn't want to cook anything, this was just the cherry on top of a nice long summers day. I'll just warn you this pretty much tastes like dessert and if you're being finicity the only bad thing in it is the dark chocolate, so for something that tastes this good there's hardly anything to complain about; I just can't explain to you how amazing this is, you just need to try it.

It is the easiest thing to make for breakfast, aside from cereal; just throw it all in a bowl mix it up and eat it. I also kind of think it tastes so much better when you just mix everything together and then you don't even have to pay attention to what's on your spoon; you're pretty much guaranteed to get a bit of everything.
