Hazelnut & Raspberry Chocolate Dipped Ice Cream Sandwiches


So I’m back with another semi reluctant Valentine’s day post (just like last year), I say semi because I’ve been super excited about this idea for a few weeks now but it’s just taken me a while to get around to making it, plus the fact I’ve also had a few baking mishaps, totally my fault my brain has been really spacey recently; it’s gone full on turbo.

Apple, Raspberry & White Chocolate Oatmeal Crumble - Bakemas Day 9


It’s been almost 2 months since my last crumble post (do I sound like I'm at a crumbles anonymous meeting?) so I think it’s probably acceptable to put this up now and this recipe was a complete accident.
I was re-testing the crumble topping for the berry oatmeal chocolate chip crumble I posted in October so I was using apples as we had an abundance off the tree hanging around begging to be used up. As the prepared baker I am I went to the baking cupboard to find no dark chocolate, the likely hood of my mum eating the chocolate out the baking cupboard is probable to pretty high, the only thing I was left with was white chocolate or 80% dark chocolate, so white chocolate it was. The idea of having white chocolate and apples wasn’t at the top of my “to try” list so I threw in some leftover frozen raspberries from the chocolate and raspberry triple layer cake, I know, I know, that was in August, what can I say, we’re not big raspberry people, but I bunged them in and magic happened.
I really didn’t think I’d enjoy it so much, it was just a means to test out the topping. I thought it would be entirely too sweet but the unsweetened fruit and slight sharpness from the raspberries really balances out the sweetness of the white chocolate. I pretty much ate half the crumble for lunch; in my defence it was a small crumble. So now that crumble story time is over, although probably a little too in depth, are you ready to make this? It’ll take you a couple of minutes to throw together and then you can wander off and peruse the Christmas tree...or do something useful.

Berry Oatmeal Chocolate Chip Cookie Crumble

This is a little bit of an odd one today. I made this recipe over a year ago and I am 90% sure I posted it, I have no idea what happened to it I just realised a while ago that it was sitting in my drafts folder with a title and nothing else, the post was completely blank. I’ve kind of been putting off re-writing this, not that I’m really sure why but a year on I think it probably deserves to see the light of day and it’s strangely coincidental that in my last post I used the same bowl. Anyway, enough about my potential incompetence and on to this delicious crumble recipe. The whole point of this recipe was to turn (probably) my favourite cookie, oatmeal chocolate chip, which I actually made a couple months ago on here, into crumble, maybe I was just looking for an excuse to eat cookies for dessert and make it seem entirely acceptable because in my head crumble is healthy, doesn't matter what you add to it. Obviously fruit is always healthy so we have a winner! Perfect for autumn or fall and still perfect for summer although it’s definitely a lot more like autumn here especially as the ground is covered in leaves which sadly were soggy today due to the rain so you didn’t get that satisfying crunch as you walked over them it was more of a squelch. I like that word, squelch.
