



1 pear
50g blueberries
50g/½ cup oats
1 tbsp chia seeds
1 tbsp coconut flour
1½ cups coconut milk
Preheat the oven to 180C/350F/Gas Mark 4
Slice the pear in half and put in an oven proof dish with the blueberries and cover, bake in the oven for about 30 minutes or until the pear is soft.
Once the pear and blueberries are cooked put the oats, chia seeds and coconut flour in a saucepan with the coconut milk, bring to a boil then lower the heat and simmer for 5 minutes while stirring or until thick and creamy. Pour into a bowl and top with the pear, blueberries and some coconut flakes.
Makes one large portion.
