Pecan Chocolate Orange Oatmeal Cookies - Bakemas Day 1


Bakemas round 4 here we come!

So it’s been 11 months...woops! Has this become a designated Christmas food blog...possibly? I figured why not throw myself back in the deep end again because I couldn't miss bakemas and what’s life without a little stress and to do list that’s way too long to complete.

In all honesty I think I feel way too calm this year, my brain is telling me I should be feeling at least a little overwhelmed because as per usual I am not organised in the slightest but it’s taking more of the “eh, it’ll be fine” approach at the moment. I mean give me a week and we’ll see if that holds up for the rest of the month considering it is only the first day!

Every year I seem to start bakemas with a cookie recipe, I mean everyone loves cookies and who am I to argue with tradition. These might quite possibly be my favourite combination to date, there’s a little place in my heart saved for oatmeal chocolate chip cookies...also dubbed FMP cookies due to a lot of late nights as an art student and multiple batches of oatmeal chocolate chip cookies. I added some pecans which just add another level of chewiness to the oatmeal cookie, plus my nut obsession has reached new heights recently, and the zest from two clementines to make it just a little festive because come on it’s bakemas, what can I say!

Anyway, let’s get to the recipe, I have another 23 days to ramble on at you and these cookies are way more interesting.
You will need
125g/4½ oz butter/margarine
75g/2¾ oz coconut sugar/light muscavado sugar
Zest of 2 clementines or 1 orange
50g/1¾ oz 70% dark chocolate
50g/1¾ oz pecans
75g/2¾ oz self raising flour
115g/4 oz porridge oats

Preheat the oven to 180C/355F/Gas mark 4
Cream the butter and sugar together, add in the zest and mix again until evenly combined.
Roughly chop the chocolate and pecans and add to the mixture with the flour and oats, stir until a dough forms.
Separate the dough into 8 and place on a baking tray lined with greaseproof paper. Slightly flatten with your fingers and add a few extra pieces of pecans and chocolate.
Bake in a preheated oven for 15 minutes
