This is the first baked cheesecake I've ever made, I have a favourite cheesecake recipe and I pretty much never stray from it, especially because when I crave cheesecake, that's the one I want. I'll just say it wasn't the smoothest of bakes I've ever had. We have a small oven and a big oven and I use the small oven for all my baking because I find it gives a better bake. If you're baking something that wants to rise an unknowable amount it's best not to bake it in an oven where it can hit the grill. Their was salvaging involved, but with most salvaging it went well and after the small mishap it turned out pretty great.

These are an all time favourite in our household, every year for Easter we make some form of chocolate cake with mini eggs on and when I'm feeling fancy, which isn't often, I'm more of a rustic "I'm in it for the cake" kind of baker, I make them look like nests. March rolls round and my mum starts buying bags of mini eggs which usually end up getting eaten and every time they get replaced until she eventually buys a family bag which you know are strictly off limits for consumption before they're placed on a cake.
You literally can't go wrong with these, chocolate cake and mini eggs what's not to like, and I have a new found love for mocha icing. I made some mocha icing while a friend was over and she made me take the bowl away from her because she was ready to eat it by the spoonful...there was actually cake to go with the icing I didn't just make icing to eat, although no judgement if you do that I'm sure I have some eating habits that could rival that.

My favourite granola ever is tesco's honey nut clusters with chocolate, it's addictive. I could sit down in the morning and eat the whole box of this stuff and I'll be honest usually I eat 2 bowls every time. I've kind of vowed to myself that I won't buy it accept on special occasions so I thought I'd take a stab at making my own healthier version.
