Cookie Dough Pancakes

It’s Pancake Day and as always being true to myself I am completely behind. I’ve been testing this recipe for a couple of weeks but decided today was a good day to shoot and upload them, okay I was heavily influenced by a friend who just wanted to eat pancakes but I can’t complain, they were so good I didn’t even sit down to eat them!

Black Forest Ice Cream Sundae (Vegan) - Bakemas Day 12

It might be Monday, but that doesn't mean you can't eat a sundae!

I’m such an advocate for ice cream in winter, I actually prefer eating it in winter, you get to curl up with a blanket (preferably a festive one) put on a film (also, that could be festive too) and eat ice cream and you’re already cosy and warm. Also, if you’re going to do this you should do it properly and make a coffee or hot chocolate to go with it because cold ice cream and a hot drink, ahh if only I had a little free time to curl up on the sofa and do this right now. Quick note though; you should probably make sure the hot drink isn’t going to burn your tongue before you drink it straight after a mouthful of ice cream, because a burnt tongue is no fun.

Cranberry, Orange, Dark Chocolate & Coconut Cookies - Bakemas Day 1

Here we go again, bakemas 2.0 and just like last year I’m still not mentally prepared and I’m already incredibly sleepy, probably my own fault for trying to fit too many things in. So instead of curling up in bed and watching a Christmas film I have coffee, one of these cookies and a hot lamb on my lap because it is pretty darn cold at the moment. I mean if you can’t be asleep coffee and cookies isn’t a bad second option, especially these cookies.

Seedy Double Chocolate Chunk Cookies

This might be a little bit of a bold claim but I think these might be my favourite cookies.

I went away last week and my obsession with these cookies went as far as me acquiring the ingredients, which was a little bit of a mission because supermarket are lacking around those parts, cute fishing villages and soggy beaches (okay, they weren't that soggy) but the most you’re going to get is a quaint little village shop and a metro/express/local version of a supermarket that probably stock the weirdest combinations of food that make entirely no sense. Case and point, no dark chocolate and only dark brown sugar.....of all the brown sugars I don't quite believe that dark brown sugar is the most versatile, what's the deal Tesco metro! I'm going off point; the point is I went out of my way all because of my love for the cookies....and maybe a little because I have a slight issue with chocolate at the moment.

One of the reasons I'm so incredibly happy with this recipe aside from the fact that they’re the yummiest cookies I've ever had is that I've finally worked out how to make double chocolate chip cookies so they're moist (I apologise for the word choice) and cookie like and don't need a kilo of chocolate in them. Nigella Lawson’s double chocolate chip cookies are the bomb but 400g of chocolate is not something I have casually laying around the house to make cookies with and melting chocolate to stir into cookies just means more washing up and I mean l believe in things being worth the wait but I don't particularly want to have to wait for my cookies please and thanks.

I am all about making recipes with things you always have in the house because who knows what you're gonna do at midnight on a Sunday evening when all of the shops are closed and there is no chocolate, well you make chocolate cookies obviously. Also can I mention, there's something that goes on in my brain when I add seeds to things it’s like that "practically a salad" quote although more like...there's seeds in this....they're good for me....and really how bad is dark chocolate....that's good for you....and I mean all that balances out the bad stuff right? Anyway, I'll stop waffling and get on with the recipe.

Spiced Shortbread Dipped in White Chocolate and Chopped Pistachios - Bakemas Day 1

I’ve been thinking about this since December 1st last year and I'm still not sure I'm entirely mentally prepared. I'm sure if you’re familiar with the internet and youtube you'll have heard of a thing called vlogmas. For any of you who have no idea what I'm talking about it’s when vloggers/people make a video everyday in December on the lead up to Christmas to document all the Christmasy things they're doing, so being the type of person who likes to set them self tasks that I'm slightly unsure I can achieve naturally I thought this was a brilliant idea. I came up with this idea last year, although I’m sure there are other food bloggers who do something similar, but spent way too long umming and ahhing over it. In that case I've technically had 12 months to prepare for this, although it’s the 1st I’m still pretty unprepared and still a tiny bit unsure this is the best idea but we’re going to roll with the punches. So I'm coining this Bakemas! 24 days, 24 recipes, potentially pictures of all the Christmas I’ve injected into my room which by the way doesn’t even have a tree in yet, I know I know it’s going up tonight, and probably a lot of Christmas stories. I’m sure I’ll spend the majority of the month stressing and having a million and one things to do but I’ve sort of grown accustomed to that feeling. I’ll just keep my fingers crossed that my ability to procrastinate like a champion doesn’t mean I end up spending the entire 24 days in the kitchen and chained to my laptop because having time to watch endless amounts of Christmas films and spend a lot of time in pyjamas drinking hot chocolate is extremely important. On that note, these are the perfect accompaniment to hot chocolate or coffee (I can't vouch for tea but potentially that too) taste amazing and really easy to whip up. Happy Bakemas!

Healthy Cranberry, Coconut & Pumpkin seed Oatmeal Cookies

I feel like this recipe is a PERFECT excuse to have cookies for breakfast. It’s basically porridge in a cookie. I made this recipe over a year ago when I was doing a month of no processed sugars and wanted to improve on it and well...honestly I just wanted cookies. They may not be the prettiest cookies you’ve ever seen but for what they lack in looks, they make up for in flavour, although my mum saw these in the kitchen and actually asked me if they had cheese in them, nope, definitely not. I’ve been trying to be a little healthier and add more protein into my diet due to my lack of meat consumption recently, I wouldn't really call these protein cookies but they have the ingredients with every intention of giving you a bit of a kick in that department, does that make you feel better about eating them? Also, did I mention there's no processed sugar or fat in these YOU'RE WELCOME!

Oatmeal Chocolate Chip Cookies (FMP Cookies)

Frustration hits and the best thing to do is get in the kitchen. I sort of forgot that this is what I love to do, over the past couple of months I’ve been so busy and preoccupied with other things, which I will explain some other time, and now all the stress is over but when I’ve not done something like this for a while I start to think everything has to be perfect. I mentally plan what post would be the best post to come back and that the redesign has to be finished and exactly the way I want it, I get so caught up in the details and end up putting everything off because of it.

I have a frustrating problem with my site that I can’t solve right now because my headache is making it difficult to stare at the screen so the perfect thing to do now? Put on an apron, some music and just bake!

So on to the important stuff; FMP cookies, otherwise known as oatmeal chocolate chip. Being an art student they have these things called final major projects (FMP) which involves a couple of months of being lost and not knowing what to, about a month of finally deciding what to do, getting inspired and a lot of procrastinating and about 2 solid weeks of late nights, messy bedrooms, film marathons, very little sleep and in my case excessive amount of hand cramp from hand sewing words. I actually watched and first 3 x-men films (this was back when only 3 films were out) on repeat for about a week. But when all night art sessions are involved, snacks must always be involved, no one has time to stop and worry about eating cue an abundance of FMP cookies. A friend and I used to make these cookies enough to have a constant stream of them, although with slight variations probably involving different sugars and she added glacé cherries but I can only imagine how many we got through in the space of those few weeks.

Triple Chocolate Chickpea Cookies (Grain Free)

Strawberries, greek yogurt and triple chocolate chip cookies is something I quite frequently eat with friends, especially in summer. I do have a favourite triple chocolate chip cookie recipe but it involves A LOT of chocolate and when you just want to make dessert you don't want to have to go out buy 1lb of chocolate and then bake. It actually only occurred to me recently that I can just make a batch freeze the dough in portions and just bake them quick when we want them, however I thought I'd go one step further, if you're going to make cookies, why not try and make them healthier.

Chocolate chip "porridge" cookies (sugar free) with homemade chocolate chips

If I was a london commuter I would 100% be the person that runs on the train just as it's about to leave looking a little flustered; with a coffee in one hand that almost spills everywhere, and a bag that almost gets caught in the door. I'd be the person who after walking up the train, sits down, finally finishes rustling about then proceeds to eats her breakfast on the train; and this is what I would take. I imagine everyone would be sneakily glancing at me with looks of slight annoyance and disgust that I'm eating chocolate chip cookies for breakfast; little do they know these cookies are almost like non-messy porridge to-go with all the taste of a cookie and non of the processed rubbish. Now don't get me wrong I wouldn't eat cookies for breakfast everyday...I'd eat pancakes too!

Mocha Snowy delight cookies

This Christmas Cadbury's brought out a limited addition bar called Snowy delight. It's a christmas bar with vanilla flavour filling and oh my is it yummy. The filling tastes like vanillary white chocolate goodness and I am a sucker for milk and white chocolate together. This chocolate tastes uh-mazing with coffee, so I thought why not put it in a cookie.
