Mocha Snowy delight cookies

This Christmas Cadbury's brought out a limited addition bar called Snowy delight. It's a christmas bar with vanilla flavour filling and oh my is it yummy. The filling tastes like vanillary white chocolate goodness and I am a sucker for milk and white chocolate together. This chocolate tastes uh-mazing with coffee, so I thought why not put it in a cookie.

125g/4oz butter/margarine
75g/3oz soft brown sugar
1 egg. beaten
2 tsp instant coffee
1 tsp hot/warm water
1 tsp cocoa powder
150g/5oz self-raising flour
180g/6oz Snowy delight chocolate bar, chopped (1 1/2 bars)

Preheat the oven to 170C/340F/Gas mark 3
Beat the fat and sugar together until light and fluffy. Add the egg and beat thoroughly. Dissolve the instant coffee in 1 tsp of hot/warm water and add to the mixture, then add the cocoa powder, flour and chopped snowy delight bar and mix. Divide the mixture into 12 and place on a baking tray.
Bake for 14 minutes in a preheated oven, leave to cool on the baking tray and devour!

Note: If you can't get hold of a snowy delight bar or it is sadly passed the holidays Kinder chocolate bars, the ones that come in the treat size packs of 16, would give a similar flavour.
