If there’s ever a time to sneak a little brandy in your breakfast it’s definitely Christmas.
Full disclosure: I'm not saying you should do this everyday, I do not promote breakfast drinking...I just promote Christmas...and eating...and recipes...and maybe they contain brandy...occasionally...when the season calls for it.

It’s been pretty cold here recently and the frosty mornings are in full swing; there’s something about a frosty morning that makes me so happy inside, it just looks so magical. So Sundays mean cosy pyjamas, hot chocolate and a warm breakfast in front of the Christmas tree.

Coffee Oatmeal/Porridge with Cherries, Chocolate & Coconut

Warm, cosy, wholesome caffeine-filled breakfast on a chilly morning topped with cherries, chocolate, blueberries and seeds; count me in.

I am 100% the definition of “it’s the little things”, I get excited about the most ridiculous things. I started writing this list around midday to put down as a caption for my daily photo but I thought it might be nice to add it on here too and it's kind of perfect for this recipe.

Apple Cider Pancakes with Sautéed Apples and Toffee Apple Cider Syrup



Today I have apples on apples on apples and maybe just MAYBE it’s slightly the wrong season for this, but I don’t care! Hey, maybe I’m just really prepared for autumn, 4-5 months overly prepared, okay let’s be honest I’m more likely to be half a year late than half a year early but still. Yeah, it’s four and a half months till October, crazy, but I’ll shut up about that now.

Can we focus on this being apple cider rather than anything else because to me, cider is a summer thing. Okay, it’s an all year round kind of thing but summer is definitely a time I crave cider. Ice cold cider on a hot summer’s day is sort of something I’ve grown up with from summers in France drinking 0.2% alcoholic cider as a kid and then bringing bottles of it home on the ferry to being a teenager drinking cider with friends in the sun and having barbeques in the middle of fields.

Breakfast and a chat?

I don’t know if this is a bad idea or not but I might start doing something a little different on Sundays. I guess I’ll see how I feel after I post this because I’ve kind of been wandering around the house for a few hours umming and ahhing about it, but what's life without a little risk?

I apologise in advance for the mass amount of writing and I'll put a disclaimer now that this is not supposed to come off as depressing in the slightest but if you want you can just skip ahead to the recipe because this breakfast is so delicious. It’s one of those foods where you almost feel like you’re being bad but it’s healthy for you and it kind of tastes more like dessert than breakfast which is a win win in my book. What more could you ask for on a Sunday morning? Anyway, onto the waffling.

Coffee Pancakes/Crêpes with Vanilla Ice Cream and Chocolate Sauce


Last week sort of ran away from me but even though Pancake Day is over I still wanted to share this recipe, and who in their right mind would turn down pancakes?

I made your morning quicker by putting your coffee in your breakfast; you can thank me when the caffeine kicks in. So maybe this is more of a dessert than a breakfast because I probably wouldn’t suggest you have ice cream for breakfast on the daily but I wouldn’t write it out completely. This is kind of the perfect dessert, with pancakes, coffee, chocolate sauce and ice cream you can’t really go wrong, I even went as far to make homemade ice cream and even though I couldn’t eat a whole scoop I did try it and it was definitely the most delicious vanilla ice cream I’ve ever had, I guess I have a lot to live up to when I start experimenting with dairy free ice cream.

Roasted Plum & Ginger Fluffy Oatmeal/Porridge - Bakemas Day 8


It’s not quite freezing here but warm breakfasts are always nice this time of year especially if you wake up to a cold house. I’m still battling that cold so a healthy warm breakfast is exactly what I need.
This porridge is made by toasting the oats and boiling the water and letting the oats absorb the liquids so that it’s nice and fluffy and not starchy and slimy like most porridges. I love making porridge like this, it gives the oats a slightly nutty flavour and having soft juicy sweet roasted plums on top is a nice way to have your fruit in the morning and makes you feel all cosy inside, even if there is a little sugar on them.
I finally found time last night after dinner to cosy up with pj’s on and watch a Christmas film, I suppose that's the only slight sliver lining to being ill but I still have the same amount of things to get done and less time to do them in.

Spiced Pumpkin Seed & Pecan Muesli with Blackberries

I have this very idealistic view of breakfast, early mornings, frost covered grass, sipping coffee, reading a book with a bowl of cereal. I think I just always like the idea of being a morning person and I honestly am, I love getting up early and pottering about, having time to relax and drink coffee before I do anything, although if I’m in a good mood I usually start what I’m supposed to be doing before I’ve even finished breakfast but having the option is nice. Problem is I’m only a morning person when I can actually get up...does that mean I’m not a morning person? Because I like getting up early and getting stuff done and I’m usually sleepier if I get up late, I just don’t like the getting up part. I also like to go to bed at 3 in the morning and unfortunately I can’t really have it both ways. One of the best things about muesli is that its healthy and really quick to make, okay, so it’s not quite as quick as pouring a bowl of cereal but I mean its close. Muesli used to be my favourite thing to have for breakfast specifically this version, but I've been making that for years so I figured it was time to spice things up a little...literally, because who doesn't love seasonal breakfast.

Pumpkin Pancakes with Bacon, Pecans & Butterscotch Sauce

I just got my head screwed on straight and realised it's November in two days TWO DAYS! It’s like I blinked and October is over and now I'm having a mini meltdown because there are so many things to do and such little time to just enjoy the excitement of Christmas coming. Its school photography season so I’ve been what feels like ridiculously busy the past couple of weeks. It might be a little manic this year but I actually really enjoy school photography season although maybe that’s because I only have to deal with all the spreadsheets, order forms and photo packing for a couple weeks out of the year. Having to deal with all that on a daily basis sounds horrendous. I spent the beginning of my week editing and re-sizing hundreds of photos, is it inappropriate to mention I had to edit bogies that were dripping out of someone’s nose. So it might be Friday but better late than never right? Because this idea has been running round my head for over a month and only now have I got around to making it. This is pretty much the perfect autumn breakfast, although I will say I'm usually entirely too sleepy to make pancakes in the morning but at least I can fantasise about it.

Apple Butter with Vanilla Pancakes


After we plucked our apple tree we had an abundance of apples all lined up in bags in the garage. Although it's not near as bad as when we had two apple trees I figured I needed to do something with them, we couldn't just freeze them all, our freezers would be overflowing with fruit and they're already full of boxes of blackberries.

I'll be honest Apple butter is kind of just fancy apple sauce although it is definitely worth the few extra hours you have to leave the hob on. This recipe is just perfect autumn breakfast....or lunch, maybe dinner? or a snack. Maybe just eat it for all meals, there's carbohydrates, protein and fruit you're all set.

I got a little carried away with this recipe, the pancakes were actually sort of an afterthought, in the days leading up to making this they were always a shall I shan't I, and I'm glad I shalled! These pancakes are the perfect mixture between crepe and pancake, although I didn't purposefully make them this way is was a pleasant and welcome oops, maybe I'll make them like this more often they just seem lighter this way.

Blackberry Muffins with Spiced Ginger Crumb Topping


Last week I had an exhausting day of chopping wood, painting and a lot of sanding directly in the sun. I came out of it with an aching arm and burnt shoulders. On the same day my mum and spontaneously I decided to go blackberry picking after dinner, this wasn't your usual drive to a place and mosey on down along the road filling your box. My mum had mentioned she kept seeing blackberries on her morning walk and even though it was a little early for blackberries we drove up to the usual place we pick them and they were miniature and mostly red. So our blackberry picking consisted of driving to a place spending a few minutes there picking the big ones then moving on, I finally had the idea to go look on the other side of town where we used to live and we hit the jackpot, well, mostly the jackpot, we filled an ice cream tub which is more than enough for what I wanted and at this point the sun was starting to set so we went home.

Is this tooting my own horn a little? I made these thinking well I've never had a blackberry muffin before I'm sure they'll be yummy but oh my damn these are good. I didn't think these muffins would taste better than my blueberry muffins but I stand corrected, the slight tartness of the blackberries balancing with the sweetness and the gingery topping my mouth is watering just thinking about them.

Dark Chocolate and Coconut Muesli with Strawberries and Greek Yogurt (the best muesli ever)


Me and my mum are big muesli fan's we have a giant pull out cupboard full of nuts, seeds, oats and dried fruit. When I say full I mean it's sort of like a random bargain bin of pre-opened packets at wholefoods. In my head we even have a "muesli making station" because the pull out cupboard is right near the edge of the island and we both stand there making our muesli. If my dad is sitting on the island doing a sudoku I end up making my muesli on half of his paper.

When I started eating breakfast a few years ago I used to have this almost every morning, it's pretty much one of my favourite thing's to eat. I even went through a phase of having it for dinner as well; when I got in late and I didn't want to cook anything, this was just the cherry on top of a nice long summers day. I'll just warn you this pretty much tastes like dessert and if you're being finicity the only bad thing in it is the dark chocolate, so for something that tastes this good there's hardly anything to complain about; I just can't explain to you how amazing this is, you just need to try it.

It is the easiest thing to make for breakfast, aside from cereal; just throw it all in a bowl mix it up and eat it. I also kind of think it tastes so much better when you just mix everything together and then you don't even have to pay attention to what's on your spoon; you're pretty much guaranteed to get a bit of everything.

Honey Nut Crunch Granola with Chocolate (processed sugar free)


My favourite granola ever is tesco's honey nut clusters with chocolate, it's addictive. I could sit down in the morning and eat the whole box of this stuff and I'll be honest usually I eat 2 bowls every time. I've kind of vowed to myself that I won't buy it accept on special occasions so I thought I'd take a stab at making my own healthier version.

Healthy Brownie Pancakes (gluten free)


Pancake day may be over but tis the season!

I made this the first day of my sugarless month because I was dying for something chocolatey and they definitely hit the spot. I'll give you fair warning that these are quite hard to flip and they don;t always end up looking like your typical pancakes, so don't worry if they bunch up a little bit. If you have a good non stick pan this should be a lot easier, I am in dire need of a new one. They taste just as good however they look.
