



1 small-medium sweet potato
¼ tsp ground cinnamon
⅛ tsp mixed spice
4 sprouts
A handful of broccoli florets
Nut stuffing balls, I used this recipe
A few spoonfuls of leftover braised cabbage, I used this recipe
A spoonful of hummus
A few fresh cherries
Sunflower seeds
Preheat the oven to 220C/430F/Gas mark 8
Cut the sweet potato into fries and drizzle with a little oil, mix in the cinnamon, mixed spice and season lightly with salt. Lay the fries onto a tray and bake in the oven for 18 minutes.
Remove the outer layer of the sprouts cut off the very end and slice in half. Place in a steamer with the broccoli florets over a pan of boiling water and cook until soft, this should take about 10-15 minutes depending on size.
Put the stuffing balls, cabbage, hummus and cherries in a large bowl, add in the sprouts, broccoli and sweet potato fries once cooked and sprinkle the hummus with sunflower seeds.
