Gingerbread Popcorn - Bakemas Day 5


Gingerbread flavoured popcorn...because gingerbread seems to be the flavour I want to make everything this year!


Popcorn is that cliché snack to eat while you watch movies and while I’m not here to dispute this age old tradition (cue unpopular opinion) I’m just not 100% a fan of eating while I’m watching a film. I know I know, but I like to get fully sucked in to movies and the food is just such a distraction for me, regardless I still have the perfect snack for all your Christmas movies...or if you’re like me I just gobble down the popcorn first then watch the film and you will not be able to resist gobbling this down. Side note: have you guys started watching Christmas movies yet? I honestly wish I knew how many I’ve watched already, I casually started in October (yes I'm one of those) and I’m pretty sure for the past month solid I’ve watched at least one a day.

Back to the popcorn....

I get so excited when I get a recipe exactly how I imagined using good ingredients, I had high hopes for this but it went above and beyond! It’s exactly what it says on the tin all the gingerbread flavour in popcorn without using refined sugar and I am obsessed with this, I spent most of the time shooting this nibbling on bits that were out of shot and once I was finished it didn’t last long. It’s also only a three step processes which makes me love it even more; pop the popcorn, mix the ingredients together and pour over the popcorn and bake in the oven on a low heat so it gets nice and crispy. No heating ingredients waiting for sugar to melt and no soggy popcorn because really the best bit about popcorn is that it’s got a little crunch. The other great thing is if you’re craving gingerbread this is so much quicker than making gingerbread men, having to roll and cut them out, bake them and wait for them to cool down, baking this popcorn does add 10-20 minutes to the process and you can skip it if you’re in a pinch but you won’t regret it I promise.
You will need
60g/¼ cup popcorn kernels
1½ tbsps honey/agave syrup
1½ tsp molasses, I used blackstrap
¾ tsp ground ginger
¾ tbsp milk, I used cashew

Preheat the oven to 120C/250F

Pop the popcorn kernels and set aside.
Mix the honey, molasses, ginger and milk together in a little dish then pour over the popcorn and stir until evenly coated.
Spread the popcorn out onto a baking tray and place in a pre heated oven for 10 minutes, you may want to turn the popcorn half way through but it’s not compulsory, after 10 minutes turn off the oven and leave the popcorn in there for 10-20 minutes.
Enjoy hot or cold
