Cinnamon Candied Nuts (Vegan & Processed Sugar Free) - Bakemas Day 21

I made candied nuts without refined sugar, excuse me while I do a quick happy dance!

I can’t decide if this is the best thing ever or a really bad idea because it just means I’m going to spend the next few weeks constantly eating these nuts.

I’ve been a little bit obsessed with making refined sugar free versions of everything and candied nuts are no exception. I was honestly apprehensive about these working out, I really thought they were going to end up being a really mediocre version of candied nuts but as I keep saying I was presently surprised, I also made these vegan because I recently got into aquafaba, yeah maybe I’m a bit behind the times, but that stuff is genius.

Usually when I make candied nuts I cook them in a frying pan because I am entirely too impatient so I am a little bummed that I had to bake these in the oven because it means you have to wait a little longer until you can eat them but it is entirely worth it.

You will need
2 tbsp aquafaba
⅛ tsp cream of tartar
45g/3 tbsps honey/agave syrup
1½ tbsp cinnamon
2 cups mixed nuts

Preheat the oven to 120C/250F
Whisk the aquafaba with the cream of tartar until frothy and mousse like it doesn’t have to be stiff, add in an sweetener and whisk again.
Stir in the cinnamon and nuts until everything is evenly coated.
Spread out on a baking tray and bake in a preheated oven for 30 minutes stirring half way though.
The nuts will come out a little soft but will harden when they come to room temperature.
Store in an air tight container for up to a month.
