Gingerbread Hot Chocolate with Mini Star Ice Cream Sandwiches - Bakemas Day 23


How is it Christmas Eve TOMORROW, this month has flown by way too fast; I’ve not watched enough Christmas films and I’ve definitely not stared at enough Christmas trees!

Normally Christmas Eve would be hot chocolate day because it’s super simple to throw together and you don’t generally have to run around getting ingredients for it you can just thrown it together curl up and enjoy your day however, I’ve been posting drinks on Saturdays so I figured I’d stick with the Saturdays and I have something a little different in mind for tomorrow.


How flippin’ cute are these mini ice cream sandwiches!

I love hot drinks and ice cream it’s the best combination but bite sized ice cream sandwiches! They’re just on another level...or maybe they’re a little extra, either way they’re flippin’ adorable! I say this every time I talk about about ice cream sandwiches, I just love the process of making them I don’t think I’ll ever get tired of it so I couldn’t resist making some for this hot chocolate. IF you have any leftover gingerbread lying around this is the perfect opportunity ti use it.

Anyway, the hot chocolate; I used fresh ginger to give it that subtle spicy warmth you get from ginger and added a little molasses to add the gingerbread flavour, sweetened with honey or agave syrup and I’d say that’s a pretty healthy hot chocolate...aside from the fact I made ice cream sandwiches to go with it, really they balance each other out so now we’re just on and even playing field.

You will need
¾” slice of ginger
350ml milk, I used cashew
2 level tsps cocoa powder
½ tsp molasses. I used blackstrap
1½-2 tsp honey/agave syrup

Peel the ginger, cut into four pieces and place in a saucepan with the milk on a low heat. Heat the milk and gently simmer for about 5 minutes.
While the milk is simmering, put the cocoa powder, molasses and honey/agave syrup in a little dish with a few tablespoons of milk and mix until it resembles a smooth paste.
Once the milk has simmered for 5 minutes add the chocolate paste into the milk and stir. Heat until the mixture is smooth.

Serve with coconut cream/whipped cream a sprinkling of ground ginger and mini ice cream sandwiches

Recipe for the ice cream sandwiches it’s here I just used a tiny star cutter and sliced the ice cream thinner.

  3. we know about common ice cream, but the ice cream roll is entirely a different item. It is an amazing Thai frozen dessert. This is also well-known as Thai fried ice cream
