Chestnut, Cranberry & Cashew Broccoli - Bakemas 8

I have recently become a little bit obsessed with eating a bowl of broccoli as a meal.

Last Christmas my sister and brother-in-law got me a subscription to a food magazine and the free gift was a Joseph Joseph nest steamer, at the time I was a little like oh that’s interesting but over the past couple months I’ve realised just how bloody great it is. It always seemed a little excessive using a massive steamer to steam broccoli just for me even if I’m eating half a head but it’s so compact and slots right into a saucepan and I kind of love it which means I’ve been eating broccoli a lot. Side note: not sponsored just an avid broccoli steamer!

Anyway the broccoli... I steam about half a head add a little sauce and a few nuts and I’m good to go, it takes about 15 minutes and it’s delicious, I guess that’s kind of what you’d call fast food. I’ll probably share my favourite recipe sometime next year but I figured it could use a little Christmas twist. I mostly came up with this recipe as a side for your Christmas dinner because I am aware some people would think it crazy eating a bowl of broccoli for a meal but it does also taste delicious on its own.

The other thing that came from this recipe is chestnuts, I’m not sure what I’ve been doing my whole life but chestnuts are amazing. I’ve never just eaten a whole chestnut before but they’re so good! I think I’m going to have to try roasting them this year...it’s like a whole new world out there.

You will need
1 head of broccoli
1½ tbsp chestnut puree
¾ tsp honey
1 ½ tsp soy sauce
3 tsp milk, I used cashew
Handful of cashews
Handful of dried cranberries
Handful of cooked chestnuts

Cut the broccoli into florets and steam for about 5 minutes or until tender.
While the broccoli is steaming mix the chestnut puree, honey, soy sauce and milk together.
Once the broccoli is cooked place in a warmed bowl, pour the sauce over the broccoli and stir until everything’s combined. Add the cranberries, cashews and chestnuts and stir so everything’s evenly distributed.

Eat as a side with Christmas/roast dinner.
