


½ eating apple
½ jar of mincemeat (205g)
190g pastry
Gingerbread, I used this recipe
Preheat the oven to 190C/375F/Gas 5
First you’ll need to make the gingerbread mixture the recipe I used is here, or you can use your favourite gingerbread recipe, you will probably have some left so you can make extra gingerbread men.
Grate the apple and mix in a bowl with the mincemeat then set aside.
Roll out the pastry to a ⅛ inch or thinner and cut circles, place the circles in a fairy cake tray and press lightly into position. Put one heaped teaspoon of mincemeat and apple mixture in each hole and top with gingerbread. Bake in the oven for 15-20 minutes or until pasty is cooked, when cooled sprinkle with icing sugar.

ReplyDeleteI'm weirdly intrigued. I usually roll my eyes at mince pies (sorry, not sorry), but that gingerbread twist... Hmm. It's the culinary equivalent of that time I tried to learn parkour. Intention good, execution probably hilarious. And honestly, the "aesthetics aside" bit made me laugh. Remember flappy bird? That game was hideous but addictive. Maybe these pies are the same? Ugly delicious? I'm willing to risk it. Might actually make these instead of attempting that cursed fruitcake again this year. Thanks!
