Healthy Brownie Bites
I’m sure everyone is still fully on the healthy eating bandwagon but don’t forget chocolate is one of the most important food groups and I promise you don’t even have to kind of cheat on your diet to eat these.
How’s everyone’s new year going? Mine’s been all work and no play, well aside from the game of bananagrams that I got roped into while I was making coffee...and maybe there’s been a little procrastinating on youtube but shhh. I had a list of things I needed to get done between Christmas and New year that’s probably as long as my arm but after hanging around with my cold ridden family for over a week my body eventually gave in and I got ill, so now I have way too much stuff to get done that it’ll probably end up being spread out into the whole of January. Weirdly I’m looking forward to getting it all done though, a fully ticked off to do list is all kinds of satisfying.
Anyway, my chocolate addiction that’s probably been going on a solid 5-6 weeks now is showing no signs of weakness; it’s honestly like a thirst I can’t quench. You know when you have something really chocolaty and you’re like ‘okay I don’t need chocolate for a week now!’ well that feeling only lasts for about half an hour on me and just because the clock struck 12 I am in no way giving up chocolate. I do love the four ingredient 70% healthy kind of chocolate though so I don’t feel too bad about it, but any way I can get my chocolate fix I’m probably sold and if it’s healthy that’s just an added bonus...enter these bad boys!
Energy balls are in the realm of genius, seriously, hats off to the person who came up with the idea. These have all healthy wholesome ingredients, no added rubbish and they’re probably the healthiest chocolate fix I’ve had in months. The other great thing about these is they last, you can make up a batch at the beginning of the week, pop them in the fridge and anytime you’ve got a hankering for chocolate they’re ready to eat and you don’t end up hunting through the cupboards for a chocolate fix. All you need is a food processor and 4 ingredients.
You will need
70g/⅔ cup pecans
60g/⅓ cup sunflower seeds
300g/2 cups dates
3-4 tbsp cocoa/cacao powder
1-1½ tbsp water
Chopped pistachios, cocoa/cacao powder and desiccated coconut for coating
Place the pecans and sunflower seeds in a food processor and pulse until finely chopped.
Add the dates and cocoa/cacao powder to the food processor and blend until everything’s fully mixed then slowly add the water until the mixture comes together.
Roll into balls and place in the fridge until they firm slightly. Cover in pistachios, cocoa powder, desiccated coconut or anything else you fancy and refrigerate.
Makes 25-30 depending on size.
