Iced Peppermint Hot Chocolate - Bakemas Day 2

I was planning on waiting to put this up because it’s all kinds of festive and I realise on the second of December some people are still in the “Christmas is ages away” place but honestly I was in full on Christmas mode before November even arrived and I can’t wait to share this it’s so delicious.

Traditionally this would be the weekend we put our Christmas tree up when I was a kid and I’m sure it’s probably the same for some of you, so if you’re doing that and if it’s not too cold you could...maybe drink this while you’re putting your tree up...maybe with a Christmas film in the background...maybe turn the fire on? I dunno, I’m just throwing the idea out there!

This is easy to make, is relatively healthy as hot chocolates goes minus the fact I added a candy cane, what can I say, it’s Christmas! The chocolate and crushed candy canes round the rim is optional but boy does it add to the experience, it also might be fun to do with the kids if you’re not afraid of a little mess. If you’re feeling like you want a little extra cheer in your drink you can omit the peppermint extract and add a splash of crème de menthe.

Anyway let’s get to it, you have a Christmas tree to put up!

You will need
2 tbsp cocoa powder
1½ tbsp honey/agave syrup
¼ tsp peppermint extract
600ml/2½ cups milk, I used cashew
Dark chocolate & candy canes, crushed and whole for serving (optional)

Mix the cocoa powder with a splash of milk until it makes a thick smooth paste then stir in the honey/agave syrup. Add the chocolate paste to a saucepan with half of the milk, bring to a boil stirring occasionally and simmer for a few minutes until everything is combined.
Take off the heat and add the rest of the milk and peppermint extract.
If you’re in a hurry you can pour this straight over ice or if you have a little more time you can chill it in the fridge then pour over ice.

For the candy cane rims melt some dark chocolate in a shallow dish a little bigger than your glasses, dip the rim of your glass in the melted chocolate then dip it in some crushed candy canes then chill in the fridge before using.
