Triple Chocolate Chickpea Cookies (Grain Free)


Strawberries, greek yogurt and triple chocolate chip cookies is something I quite frequently eat with friends, especially in summer. I do have a favourite triple chocolate chip cookie recipe but it involves A LOT of chocolate and when you just want to make dessert you don't want to have to go out buy 1lb of chocolate and then bake. It actually only occurred to me recently that I can just make a batch freeze the dough in portions and just bake them quick when we want them, however I thought I'd go one step further, if you're going to make cookies, why not try and make them healthier.


Ingredients 
1 can of chickpeas
2 tsp vanilla extract
185g/ 3/4 cup peanut butter
100g/ 1/3 cup honey
30g/2 tbsp cocoa powder
1 tsp baking powder
90g/ 1/2 cup of chocolate chips/chunks, I used a mixture of white and milk

Preheat the oven to 175C/350F/Gas 4

Place all the ingredients except for the chocolate chips in a food processor and blend until smooth.

Add the chocolate chips and stir until evenly distributed.

Separate the dough, place onto a baking tray and flatten until desired cookie shape/size.

Bake in a preheated oven for 12-14 minutes, they will still be very soft when you take them out.

Makes 10-12 depending on size.

Honestly, if I could be as disciplined about baking as I am about procrastinating my online business studies, I'd be all set.
