Christmas pudding truffles

These are so simple to make and would be a perfect after dinner truffle with a coffee or tea. If you like christmas pudding you'll love these!

Ingredients
75g/3oz Plain chocolate
450g/1lb Ready-made Christmas pudding
75g/3oz White chocolate
Green sugar paste
Red sugar paste

Melt the dark chocolate in a heatproof bowl over a pan of simmering water or in the microwave.
Add the cold pudding into the melted chocolate, squish the mixture together until evenly combined, it's easiest if you use your hands. Shape into balls and refrigerate to set (takes about 2 hours).
Makes about 16-20 small balls, you could make larger ones but they are rather rich I don't think you'd need them any bigger.
While the Puddings set, roll out the green sugar paste and cut holly leaves and roll the red sugar paste into tiny balls.
Once the puddings are set melt the white chocolate then dip the truffles in the white chocolate, after the chocolate has set slightly add the holly on top.
